Hello all readers of my blog. In a previous article, we already talked about how to cook fried eggplant with garlic and tomatoes. Here, at your request, I wanted to continue this topic. In fact, eggplant can be eaten in any form, even raw. But we will not go to extremes and think about how to cook them in an interesting way. After all, there are so many recipes that it is quite difficult to determine. You can cook a new dish every day for a month and never repeat. Therefore, today I decided to share with you simple and not very options that our family loved.

How to cook eggplant quickly and tasty in the oven?

This is the most beautiful way. But do not think that it is complicated. This is not true. After all, any dish made from this vegetable is considered very tasty. It serves as a good snack not only for the holiday, but also on any other day. Familiar tasting will be delighted with such food. Therefore, cook and see for yourself.

Ingredients:

  • Eggplant - 2 pcs.,
  • Tomato - 4 pcs.,
  • Suluguni cheese - 300 gr.,
  • Bulgarian pepper - 2 amount,
  • Garlic - 1 pc.,
  • Basil - 20 gr.,
  • Cilantro - 20 gr.,
  • Vegetable oil - for frying,
  • Peppers mix to taste
  • Salt to taste.

Cooking:

1. To start, wash all the vegetables and herbs. Dry with a paper towel or napkin to remove excess moisture.

2. Peel the garlic from the husk and pepper from the seeds.

3. Put two tomatoes in a deep bowl and pour boiling water. So it will be easier for us to get rid of the peel. Leave for a while, while preparing other products for the sauce.

4. Bulgarian pepper chopped with small straws.

5. Part of the greenery is also shredded.

6. We take out the tomatoes from the water and clean them from the peel and the stalk. We cut into small cubes.

Set this cut aside for a while.

7. We remove the place of the stalk in the eggplant. And we cut them into strips 1 cm thick not to the end to make a fan.

8. Salt each petal of a little blue and set aside on a plate. After lying down, they will secrete bitter juice.

9. The other two tomatoes are cut into circles with a thickness of 5 - 7 mm.

10. The remaining greens are chopped and put into a small deep cup.

11. Finely chop the garlic or squeeze through a press. You can also use a fine grater. We send it to the basilica and cilantro.

Mix thoroughly with a fork. If desired, you can add coriander.

12. Cheese needs Suluguni. But sometimes it is difficult to find in stores, so you can replace it with another. It needs to be cut into long plastics in the amount of our eggplant petals.

Replacement of this dairy product may be Adyghe or Brynza. But since it should melt, mix it with regular hard cheese or mozzarella.

13. Put pepper in a preheated pan with vegetable oil. Fry it until it becomes soft.

14. There we send tomatoes with herbs and you can add a little salt. Add a mixture of peppers. Mix and cover. Simmer over low heat until all liquid has evaporated.

The sauce can be made hot by adding adjika or chili. But it is optional.

15. Remove all liquid from the eggplant and begin to fill them. First, put on the petal a mixture of herbs and garlic, then a tomato and cheese. Press on top with another plastic.

So do it to the end. We lay the vegetables on a baking sheet, greased with vegetable oil or covered with foil.

To fix so that the fan does not fall apart, you can use a wooden skewer.

16. On top of them we spread our vegetable mass. We send to the oven, preheated to 180 degrees for 20 - 25 minutes.

Tasty eggplant baked in the oven with tomatoes and cheese

This is the most delicious vegetable dish I've ever had to cook. And it’s very beautiful, it’s always nice to serve it and no less nice to eat.

This recipe is already on the pages of my blog, it is called “Eggplant Fan”, but today I would like to include it in this thematic article. Believe me, this cooking option is worth it.

  • eggplant - 4 pieces
  • cheese - 250 gr
  • tomatoes - 8 pcs.
  • bell pepper - 1 pc.
  • garlic - 2 cloves
  • basil - 1 - 2 branches
  • salt, black pepper to taste
  • spices to taste and desire
  • vegetable oil - 2 - 3 tbsp. spoons

1. "Little blue" wash and dry. Then, not cutting the stalk, but only by trimming it, and cutting the “skirt", cut in the form of a fan. To do this, you need to arm yourself with a very sharp knife and make incisions, starting with a blunt nose and right under the stalk. The thickness of the strips should be from 1 to 1.5 cm.

That is, simply put, you need to cut it so that the strips are held by the stalk, and when opened would form a fan.

2. Salt the white flesh, gently rubbing the crystals with your fingers. We do it carefully so as not to break our workpiece. Allow her to lie down for 10-15 minutes, so that she becomes softer, and that all bitterness comes out.

And so that the process goes faster, put a cutting board on the cut vegetables, and put a small saucepan with water on it.

3. Cook the garlic oil. To do this, chop the garlic and add oil to it. It will infuse and be ready. In the resulting mixture, you can add those spices that you like.

4. Tomatoes cut into circles, and if they are large, then each of them into two more halves. We will embed them in a “fan”. And also cut bell pepper in half rings. Of course, you can do without it, but it will give a simply incomparable aroma to the whole dish.

5. Also cut the cheese in such a way that it will conveniently be laid out in a “fan”. If there is mozzarella, then it will be just fine. If not, then in principle any hard cheese is fine.

6. Meanwhile, our “little blue ones” are slightly limp, and we need to gently squeeze out excess moisture from them. Then grease the plates with garlic oil, along with all the spices and garlic.

7. And you can put tomatoes into the slots.

And then cheese and two - three rings of bell pepper. For taste and aroma, put in the same delicious-smelling basil.

8. Grease a baking sheet with vegetable oil. Arrange the “fans”, and whole small tomatoes, and lay on top of all this splendor the remaining bell peppers.

9. We put our beauty in an oven preheated to 180 degrees and bake for 20 minutes.

10. At the end of cooking, remove the pan and allow the dish to cool slightly, five minutes will be enough. Lay out the “fans” on portioned plates and serve. Eat with pleasure, enjoying the taste, aroma and appearance of a wonderful dish.

Hot sandwiches with golden cheese crust

This dish can be served as a snack on the festive table, or as a sandwich for a snack. And instead of the usual piece of bread, we will have a circle of vegetables.

Such a sandwich is tasty both in hot and in cold form. Prepare such a dish, and I am sure that it will not leave you indifferent.

  • eggplant - 1 pc (large)
  • onion - 1 pc
  • carrots - 1 pc (small)
  • bell pepper - half
  • garlic - 2 cloves
  • cheese - 100 gr
  • sour cream or mayonnaise - 2 tbsp. spoons
  • vegetable oil - 3-4 tbsp. spoons
  • paprika - 2 teaspoons without top
  • salt, pepper to taste
  • greens for serving

1. Wash, dry and cut the vegetables in circles 1 cm thick.

It is better to choose a large fruit, but not very thick. It will already have too many seeds. And also in such a lot of bitterness.

Put circles in a bowl and sprinkle with salt. It will help get rid of bitterness and moisture. Leave in this state for 20-30 minutes. Then squeeze out each piece slightly, being careful not to break it and not damage the integrity.

2. In the meantime, the pieces let the juice in, let's take other vegetables. Cut onions into quarters of rings, brightly colored bell peppers with straws, and grate the carrots.

3. Then fry everything in a pan, separately in its zone, for the time being, without stirring the components for a while. Add paprika, as well as salt and pepper to taste. And at this stage, all the components can be mixed so that they exchange their tastes.

4. Hard cheese, such as parmesan, grate. And then chop the garlic, you can use the same grater for this. Pour paprika to them, and also add sour cream, or mayonnaise. If you add sour cream, then the mixture can be slightly salted.

5. Grease the baking dish with vegetable oil and put out circles of prepared and squeezed vegetable. Put the fried vegetable mixture on top and then the cheese. Distribute everything evenly enough for all the pieces.

6. Put the mold in an oven preheated to 200 degrees and bake for 20 minutes.

Then get it and put it on a plate, serve and try. Delicate flavorful sandwiches will not leave you indifferent. They turned out very tasty.

A simple and quick way to bake “blue” in garlic sauce

This is the easiest recipe with a minimum of ingredients and with the same minimum cooking time. And the baked vegetable turns out so delicious that you will certainly want to repeat its preparation soon.

If desired, cheese can be added to the recipe. And if you rub it on top, you get a dish with a new taste.

  • eggplant - 1 pc.
  • mayonnaise - 50 ml
  • garlic - 4 cloves
  • salt, pepper to taste

1. Wash and dry the vegetable. It is best to take it medium size. Then cut into slices with a thickness of 0.7 - 0.8 cm and salt.

Let stand in this form for 30 minutes. During this time, the circles will start the juice, and bitterness will come out through it.

2. Then, the cut preforms will need to be wiped with paper towels, this procedure itself will allow you to remove the bitter juice from them.

3. In the meantime, we have free time, we can cook garlic mayonnaise sauce. To do this, chop the garlic using a press and put it in mayonnaise. If it is possible to cook it at home, it will be just fine. If not, then the store will also fit perfectly.

Also add ground black pepper to it, and if you want, pour a pinch of your favorite spices. A mixture of Provencal herbs is excellent for these purposes.

4. Coat each circle with garlic mayonnaise mixture on all sides.

Put them on a baking sheet covered with parchment paper.

5. Bake at a temperature of 200 - 220 degrees for 20 minutes. The circles should lightly brown and a delicious smell will spread throughout the kitchen.

Our simple dish is ready. You can shift the circles on a plate and serve.

And if you cook with cheese, then the circles on top will be covered with a beautiful ruddy coat.

Eggplant with cheese, cottage cheese and garlic

Another way to deliciously bake in the oven, our today's vegetable is also very simple, both in the composition of the ingredients and in the preparation.

  • eggplant - 1 pc.
  • cottage cheese - 70 gr
  • cheese - 50 gr
  • garlic - 1 clove (small)
  • greens - 2 - 3 branches
  • egg - 1 pc
  • salt, pepper to taste

1. Vegetable cut lengthwise into two equal halves. The peduncle is not necessary to cut. Boil them in boiling salted water for 7 minutes. Then get out and allow to cool a little.

2. In the meantime, we will prepare the filling. To do this, crush the curd with a pusher to prepare mashed potatoes. So it will be more uniform.

Add to it chopped garlic and herbs, grated cheese, an egg (for a given amount of ingredients we need it not large). Or take only the yolk. And also salt and pepper to taste. Mix the mass.

3. Take the pulp out of the cooled vegetable with a spoon, leaving the edges at least 1 cm thick. Cut the pulp into small cubes and add to the cheese mass.

4. Cover the baking sheet with parchment paper and put our improvised “boats” on its surface, fill them with minced meat.

To make the dish more appetizing in appearance, sprinkle with grated cheese on top.

5. Bake in the oven at a temperature of 180 degrees 30 minutes. Then get out and serve.

If the fruit is large, then two servings will be obtained from this quantity of ingredients. If you need more servings, then increase the amount of all ingredients proportionally.

Beef minced meat rolls in tomato sauce

Meat dishes, of course, require a little more time to cook than vegetable dishes. But you cannot do without them. Moreover, meat and eggplants are perfectly combined with each other, and dishes with these components are always just delicious.

And here is one of the most magnificent recipes. We will use ready-made ground beef in it. But if desired, the stuffing can be from any other meat, as well as chicken. And of course, a mixture of different meats will make the dish even tastier.

  • minced meat - 1 kg
  • eggplant - 1 kg
  • onion - 1 pc
  • garlic - 2 cloves
  • mozzarella cheese - 150 gr
  • dried basil - 2 tsp
  • salt, red pepper to taste

  • tomatoes - 800 gr (can be tomato sauce)
  • garlic - 2 cloves
  • salt, red hot pepper
  • sugar - 0.5 tsp

Also, prepare some vegetable oil to grease the baking dish.

1. "Blue" wash and cut the stem. Then cut longitudinally into fairly thin strips, about 0.5 cm thick. We will prepare rolls, and therefore, in order to make it easy to fold and you will need such a thickness.

2. Cover the baking sheet with baking paper and put the sliced ​​plates in a row. Put in an oven preheated to 180 degrees for 10 minutes. During this time, the vegetable will become softer and it will be easier for us to cope with our task.

3. While the billets are baked, we will take on the stuffing. I already have it ready, so I will add only onion and garlic to it. But for this, the components should be crushed. You can do this in a blender, or you can twist through a meat grinder. Choose a method more convenient for yourself.

If you do not like the smell and taste of garlic in meat filling, then add only onions.

Also, minced meat should be salt to taste, add dried basil and red hot pepper to taste. If you do not like spicy dishes, then you can add black ground pepper, or red, but not much.

4. Immediately prepare the baking dish. We will use a glass form with high sides. It must be lubricated with vegetable oil.

5. Put a full tablespoon of minced meat on the plate of the baked slice and roll it into a roll. Fold seam down into the mold. In the same way, make all the rolls, and tightly lay them in even rows.

6. Now we need to prepare the fill. Make it easy. You can peel the tomatoes and punch them with a blender, or just use thick tomato juice with pulp.

Add chopped garlic, salt and sugar to it and mix. Put on fire, with stirring, wait until the mixture boils and cook it for 10 minutes.

7. Then fill the waiting rolls with the resulting aromatic tomato juice and put in the oven preheated to 180 degrees for 40 - 45 minutes.

8. After time, take out the dish, sprinkle with grated cheese and bake for another 5 minutes.

If you use another cheese, the time of the final stage may slightly increase. We need to achieve a state where it will completely melt.

Take the finished dish out of the oven and place it on the plates in the required portions.

Eat with pleasure. The dish turns out to be appetizing and attractive, so it can be cooked, both simply for dinner, and for the arrival of guests.

Turkish-style eggplant baked in the oven

And this is another way to cook vegetables with meat. And of course, we will use the stuffing again. Our dishes are quick today, so if we want to cook them with meat, then it should be grinded in a meat grinder.

This dish is notable for the fact that in this way it is cooked in Turkey. And I must say that I had to try it there. And I want to tell you that it is tasty, just unbelievable. It would seem that everything is taken the simplest and the same as always, but apparently just this genius lies in simplicity. And so we will cook.

  • eggplant - 5 pcs.
  • ground beef - 250 gr
  • onion - 4 pcs.
  • garlic - 2 cloves
  • bell pepper - 2 pcs.
  • parsley - a small bunch
  • vegetable oil
  • salt, pepper to taste
  • sugar - 0.5 tsp

  • tomato paste - 2 tbsp. spoons
  • water - 1.5 cups

1. Wash the vegetables and leave the stem, cut strips of skin from the fruit in the manner shown in the photo.

Then make a deep longitudinal incision on one of the sides and fill them with salted water so that they are slightly limp, and also so that bitterness comes out. Soak in water for 30 minutes.

2. Dry the vegetables and grease them on all sides with vegetable oil. Grease a baking sheet with oil and put prepared vegetables on it, preferably with a cut up. If it doesn’t work out, it's okay, then just turn it over

3. Put the baking sheet in the oven, bake until they are soft, and also lightly browned. Set the temperature to 180 degrees.

4. Prepare the filling. To do this, finely chop the onion and chop the garlic. Warm the pan, pour oil into it and fry them until soft.

4. Mix the chopped vegetables in one bowl, salt and pepper to taste. Also add to them ground dried, or chopped fresh rosemary. If you did not have it, then you can pick up a replacement for it in the form of thyme, or a mixture of Provence herbs.

5. Fill the boat with the mixture, distributing it all evenly.

7. Put the filled boats on a baking sheet lined with baking paper and greased with vegetable oil. Put baked in the oven for 20 minutes. You will need a temperature of 200 degrees.

Ingredients:

  • Eggplant - 5 pcs.,
  • Minced meat (pork + beef) - 300 gr.,
  • Hard cheese - 100 gr.,
  • Tomato - 3 pcs.,
  • Onions - 1 pc.,
  • Garlic - 3 tooth.,
  • Salt to taste
  • Ground black pepper - to taste,
  • Thyme - 1 tsp.,
  • Basil - 1 tsp.,
  • Ground crackers - 2 tbsp. l.,
  • Vegetable oil - for frying,
  • Greens to taste.

Cooking:

1. All vegetables and greens are washed and dried from excess moisture.

2. From the eggplant (it is better to take small ones) we cut the stalks. Put them in a pan and pour boiling water. Simmer for about 10 minutes. Then we cool them a bit so that you can work with them.

This is done so that the time they spend in the oven is minimal.

3. Onions and garlic peeled and finely chopped. Fry in a heated frying pan with vegetable oil until golden brown.

4. Minced meat can be taken any, but we have mixed. Add it to the vegetables. And at the same moment, salt, pepper, and pour spices.

5. Cut the tomatoes into small cubes and send them there. Cook until all the liquid has evaporated.

6. Finely chop the greens and put them into a deep container.

7. Eggplant cut in half along the entire length. Remove the flesh with a knife or a tablespoon, but not all. Leave somewhere 5 mm. Thus we get boats.

8. We will not throw out a heartlet. We chop it into cubes and send it to the grass.

9. To them we add ready-made stuffing. Mix and try. If necessary, add more salt.

10. Grease a baking sheet with vegetable oil or cover it with foil.

11. We stuff the eggplants and put them on a leaf.

12. Three cheese on a fine grater and sprinkle on them our boats.

13. We send to the oven, preheated to 180 °, for 20 minutes.

How to bake whole eggplant?

Such a dish can be used both independently and as a side dish. If desired, you can cook it with meat or poultry. We will not use it with this. Also, most simply bake it in the oven alone, without using anything else. And then ready add it chopped to any dish. Our recipe will be much tastier.

  • Potatoes - 3 pcs.,

Cooking:

1. All vegetables, my greens and dry.

2. Cut the stalk from the eggplant and pierce it with a fork in several places. Put in a bowl and fill with warm water and salt.

3. Peel and cut the carrots and potatoes into slices about 1.5 cm thick.

4. Peel the onion from the husk and cut it into 4 parts with the tomato.

5. Bulgarian pepper chopped into strips.

6. Finely chop the greens.

7. Everything that we have prepared, put into a sleeve.

8. Squeeze out the same garlic through a press.

9. Salt and pepper. Also add vegetable oil and mix.

10. We take the eggplant out of the water and wipe it. We send to the contents of the package.

11. Let the air out of the sleeve and close it. We make 3 punctures.

12. We send to the oven, preheated to 200 °, for 20 minutes.

When serving, the finished vegetable can be cut.

This dish is prepared very quickly and easily. If you are assembling a festive table, then it will look very beautiful on it. The taste is also quite unusual.

Ingredients:

  • Eggplant - 2 pcs.,
  • Mushrooms - 150 gr.,
  • Tomato - 2 pcs.,
  • Cheese - 100 gr.,
  • Garlic - 3 tooth.,
  • Salt - 2 pinches
  • Onion - 1 pc.,
  • Dill - 5 gr.,
  • Mayonnaise - 200 ml.

Cooking:

1. My eggplant. We remove the stem from them and cut it in length. The plates should be about 1.5 cm thick.

2. Put them in a large cup and salt. Leave to stand for 15 minutes to get all the bitterness.

3. Mushrooms are chopped into cubes.

4. Also do with onions.

5. Tomatoes cut into circles.

6. For the dill sauce finely chop, and squeeze the garlic through a press. Mix with mayonnaise.

7. Put the little blue ones on a baking sheet covered with foil.

8. Spread on top of each layer: tomatoes, onions and mushrooms, sauce.
