Stuffed Peppers with Feta and Spinach

In peppers, cut off the top, remove the seeds. Cut the onion into small cubes. Finely chop the spinach, then scald.

Combine spinach with onions, rice, grated cheese and tomato paste. Add salt, pepper and mix. Stuff the peppers with the mixture and cook in salted water until tender.

Spasseruyte flour until golden brown, cool, add a little water, then sour cream. Salt, pepper and cook the sauce for 5 minutes.

When serving, put the peppers on a dish, decorate with greens. Serve the sauce separately.

1. Preheat the oven to 180C. Next, prepare the pepper. Cut it in half and remove the seeds and core. Place them on a baking sheet and brush with olive oil. Bake in the oven until soft for 20 minutes.

2. While pepper is baked, prepare the filling. In a large frying pan, fry the onion, diced in olive oil, until soft, then add finely chopped garlic and cook for another 1 minute.

3. Then pour the vegetable or chicken broth, add the tomatoes, diced and pearl barley. Season with spices and bring to a boil. Cook until the barley is soft and the bulk of the liquid has evaporated. Add spinach and mix.

4. Then add the toasted pine nuts, which can be browned in the oven while the barley is cooked. For the finishing touch, add half the crumbled feta cheese and mix.

5. Fill the prepared pepper with the filling and crumble the remaining feta cheese on top.
